270g hakubaku Udon noodles
120g Shitake mushrooms, sliced
3 garlic cloves, minced
10ml soy sauce
2 leeks, finely chopped
boiled egg or nori paper, optional

Winter is coming! Ease the chill with Chilly Weather Udon.
Preheat a large wok and saute the shitake mushrooms in the oil.
Add the garlic and leek and saute for 1 minute more.
Add the miso and water and bring to a gentle boil.
Lower the heat to a simmer.
Stir in udon.
Add soy sauce to taste. Optional (add sliced boiled egg on top and nori paper)
